Our summer menu: Mediterranean cuisine, rice dishes and fresh market fish

Summer is here, and with it a menu that celebrates the Dénia Mediterranean: rices cooked to order, fresh fish from the local market and seasonal produce from the Marina Alta. Here is what awaits you at our table this season.

Summer in Dénia has an unmistakable flavour, and this year we wanted to capture it dish by dish in our new menu. Right by the sea, with the Costa Blanca breeze as our finest companion, we open the season with a proposal that looks straight to the Mediterranean: local produce, honest recipes and a respect for the rhythm of the seasons that defines the true cuisine of the Marina Alta.

Our rice dishes are the heart of the menu. We treat rice as Valencian tradition demands, in a wide paella over carefully controlled heat, to achieve that socarrat so prized by those who truly know their rices. You will find arroz a banda made with a long stock of small fish, the creamy rice with Dénia red prawn, our local treasure, and the black rice with cuttlefish and a gentle all i oli. Every rice is cooked to order, so it is well worth taking your time and enjoying the wait by the water.

From the sea to the table, with barely a stop in between. Each morning we select the fish at the Dénia market, where the catch arrives from the boats that work these very waters. Depending on the day and what the auction offers, you will find sea bass, sea bream, monkfish or the prized rockfish. We prepare it baked in salt, butterflied or simply grilled with a thread of extra virgin olive oil, because when fish is this fresh the best thing is to stay out of its way.

Seasonal produce rules in every corner of the kitchen. In summer we celebrate the Valencian tomato in salad, roasted peppers, tender broad beans and vegetables from the local market gardens, brought in freshly picked. Prawns, langoustines and mussels round out a pantry that shifts with what the land and the sea provide, never forcing the calendar.

We do not forget dessert, where the Mediterranean also leaves its mark. You will taste our almond flan from the Marina Alta, the artisan turrón ice creams and seasonal fruit from the nearby fields, refreshing and light to close a summer meal. Everything paired, if you wish, with wines from Alicante cellars that speak to the very landscape before you.
